1. Make honey syrup

If you don't have honey syrup ready, make it by combining equal parts honey and hot water (1:1 by volume). Stir until fully incorporated and let cool. Measure 0.75 oz for the recipe.

2. Combine and shake

Add 2 oz Buffalo Trace bourbon, 0.75 oz fresh lemon juice, 0.75 oz honey syrup and 2 dashes Angostura bitters into a cocktail shaker. Fill the shaker with ice (about 1 cup) to chill and dilute properly.

3. Shake

Shake vigorously for 12–20 seconds until the outside of the shaker is well chilled (you should feel it become very cold).

4. Strain

Double-strain (using a Hawthorne and a fine mesh strainer) into a rocks glass over a single large ice cube or sphere. If you prefer no ice, strain into a chilled coupe.

5. Garnish and serve

Express the oils from a lemon peel over the glass by holding the peel with the outer skin facing down and giving it a quick twist; rub the peel along the rim and drop it into the drink as garnish. Serve immediately.

6. Estimated taste profile

Sweet, bright citrus notes balanced by the caramel/vanilla of Buffalo Trace and rounded with the botanic spice of Angostura bitters. Adjust honey syrup to taste for more or less sweetness.
