Prep & Oven

Preheat and prepare bed
Preheat oven to 450°F (230°C). Spread the crushed rock salt evenly across a large rimmed baking sheet or in a shallow baking dish to create a stable bed that will keep oyster shells level while baking.
Shuck Oysters

Using an oyster knife and a towel or glove for safety, hold each oyster with the hinge toward you. Insert the tip of the knife into the hinge and twist to pop it open. Slide the knife along the top shell to sever the muscle and remove the top shell. Run the knife under the oyster meat to free it from the bottom shell while keeping the oyster and its liquor in the deeper bottom shell. Place each shucked oyster on the prepared salt bed, spaced evenly.
Make Herb Crust

In a medium bowl combine panko breadcrumbs, chopped parsley, chives, tarragon (if using), grated Parmesan, minced garlic, lemon zest, sea salt and black pepper. Pour in the melted butter and olive oil and stir until the mixture is evenly moistened — it should hold together slightly when pressed but remain crumbly. Taste and adjust seasoning if necessary.
Assemble Oysters

Spoon about 1 tablespoon of the herb crust mixture onto each oyster, pressing lightly so the topping adheres but not so much that the oyster is crowded. The crust should form a thin layer over the oyster and some of the liquor. If any oysters look very dry, add a few drops of lemon juice or a little melted butter to moisten before topping.
Bake

Place the baking sheet with oysters in the preheated oven. Bake for 8–10 minutes, or until the topping is golden brown and crisp and the oyster edges begin to curl slightly. Avoid overbaking — oysters should remain tender.
Make Lemon Agrumato

While the oysters bake, make the lemon agrumato. Warm the extra-virgin olive oil gently in a small saucepan over very low heat (do not let it smoke) for 2–3 minutes to release aromas. Remove from heat and add the lemon zest; let steep for 10 minutes. Strain the oil through a fine-mesh sieve into a small bowl, pressing lightly on the zest to extract oil. Stir in the fresh lemon juice and let cool slightly. Taste and adjust with a pinch of salt if desired.
Finish & Serve

When oysters are done, remove from oven and let rest 1 minute. Drizzle about 1/2 teaspoon of the lemon agrumato over each oyster (or serve agrumato in a small pitcher for guests to drizzle). Garnish with a small pinch of microgreens or chopped parsley and serve immediately with lemon wedges on the side.
Notes & Safety

If using extremely salty oysters or if you prefer a less briny result, you can rinse the oyster shells quickly under cold water before shucking, but avoid losing the natural liquor. Discard any oysters with broken shells or off smells. Serve hot and consume within a short time for best texture and safety.
