Preparation and Cooking
Prepare the Prawns
Peel and devein the prawns, leaving the tails on for presentation.
Make the Tempura Batter
In a bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Gradually whisk in the cold sparkling water until the batter is smooth and slightly lumpy. Do not overmix.
Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).
Fry the Prawns
Dip each prawn into the tempura batter, allowing excess to drip off. Carefully place them in the hot oil and fry in batches until golden brown, about 2-3 minutes. Remove and drain on paper towels.
Serve
Serve the crispy tempura prawns hot with a side of sweet chili dip.
