Wash and thoroughly dry the mixed salad greens using a salad spinner or clean kitchen towels. Excess water will dilute the dressing and make the salad soggy.
Place the dried greens in a large mixing bowl (at least 10–12 cups capacity) so there is room to toss without spilling.
Prepare the vegetables: halve the cherry tomatoes, thinly slice the cucumber and red bell pepper, thinly slice the red onion into rings or half-rings, and shred or julienne the carrot. Add each prepared vegetable to the bowl with the greens.

Make the vinaigrette
In a small bowl or jar, whisk together the red wine vinegar (or lemon juice), Dijon mustard, minced garlic, and honey/maple syrup (if using). Slowly drizzle in the extra-virgin olive oil while whisking vigorously to emulsify, or close the jar and shake until combined. Season with salt and freshly ground black pepper. Taste and adjust acidity (add more vinegar/lemon) or sweetness (add more honey) as desired.
If dressing will sit more than 10–15 minutes before use, re-taste and adjust seasoning again before tossing.
Assemble & Serve
Just before serving, pour about 2–3 tablespoons of the vinaigrette over the salad greens and vegetables. Start with less — you can add more. Gently toss the salad with two large spoons or salad tongs so the dressing coats the leaves evenly without bruising them.
Serve immediately on chilled plates or in a large bowl. Leftover dressing can be stored in a sealed container in the refrigerator for up to 5 days; keep salad components separate for best freshness.
