Prepare ingredients

Remove sausage from casings if using links; crumble or break into 1-inch pieces. Finely chop the onion and mince the garlic. Measure out dried herbs and seasonings.

Heat pan

Place a large skillet over medium-high heat. Add olive oil and let it warm until shimmering but not smoking, about 30 seconds.

Cook onion

Add the chopped onion to the pan and cook, stirring occasionally, until softened and translucent, about 4–5 minutes.

Brown sausage

Add the crumbled sausage to the skillet. Use a spatula to break it into bite-sized pieces. Cook, stirring occasionally, until the sausage is well browned and no pink remains, about 7–9 minutes. Spoon off and discard excess rendered fat if more than 2 tablespoons remain.

Add garlic and seasonings

Stir in the minced garlic, dried oregano, dried basil, crushed red pepper flakes, kosher salt, and black pepper. Cook for 30–45 seconds until fragrant, taking care not to burn the garlic.

Optional finishing & serving

Deglaze (optional)

If you want a pan sauce or are making a sandwich/pasta, pour in the white wine or chicken broth to deglaze the pan, scraping up browned bits with a wooden spoon. Simmer until liquid is reduced by half, about 2–3 minutes.

Simmer in tomato sauce (optional)

If using tomato sauce, add it now and reduce heat to low. Simmer the sausage in the sauce for 8–12 minutes to meld flavors, stirring occasionally.

Finish and garnish

Taste and adjust seasoning with a pinch more salt or pepper if needed. Remove from heat and stir in chopped parsley. Sprinkle with grated Parmesan if desired.

Serve hot on sandwich rolls, alongside pasta, or as part of a larger dish. Makes about 4 servings (or enough to top 4 sandwiches or serve with pasta).
