Prepare and arrange cured meats
Remove meats from refrigerator about 15–20 minutes before serving to take the chill off. Fan out or fold slices into attractive piles: create small stacks of ham and turkey (fold each slice into thirds), arrange salami and soppressata in overlapping circles, and make a loose, slightly taller pile for roast beef. Aim for variety of shapes and heights across the platter.
If using thicker slices (roast beef), stack then slice into smaller bite-size pieces with a sharp knife so guests can pick easily. Keep meats separated by type to let flavors remain distinct, but place complementary items (e.g., salami near cheddar) close enough for convenient pairing.

Bring cheeses to room temperature
Remove cheeses from refrigerator 20–30 minutes before serving to develop flavor. Place soft cheese wedge whole or slightly cut into the rind to make it easy to spread.
Slice harder cheeses (cheddar, Swiss) into even slices or 1–1.5 cm cubes. Arrange slices and cubes in small groups on the board near meats they pair well with. Leave space around the soft cheese for a small spreader or knife.

Drain olives and place in a small bowl or pile on the board. Halve cornichons lengthwise to make them easier to pick. Rinse and dry grape tomatoes and grapes; place in small clusters.

If serving baguette slices warm: preheat oven to 180°C (350°F). Lightly brush slices with olive oil and toast on a baking sheet for 6–8 minutes or until edges are golden. Let cool slightly. If serving at room temperature, simply arrange crackers and sliced baguette in stacks or fanned shapes around the platter.

Choose a large wooden board or serving tray. Start by placing bowls/ramekins for olives, mustards, and honey in different spots to act as anchors. Arrange meats, cheeses, bread/crackers, and accompaniments around the bowls, varying textures and colors to create visual interest.
Garnish with rosemary or parsley sprigs and tuck lemon wedges by seafood-free items if desired. Sprinkle a light grind of black pepper over the soft cheese and one or two slices of meat if you like. Ensure each item is easily reachable and provide small tongs or toothpicks and cheese knives or spreaders.
Let the assembled tray sit at room temperature for 5–10 minutes before serving to allow flavors to meld. Refill bowls and reposition items as they get depleted.
