Arancini (rice balls)
Cook the rice risotto-style
Rinse the Arborio rice briefly under cold water until water runs almost clear. In a medium saucepan, heat 1 tablespoon olive oil and 1 tablespoon butter over medium heat. Add the finely chopped onion and cook gently 3–4 minutes until translucent but not browned. Add the rice and stir to coat for 1–2 minutes. Pour in the white wine and cook until mostly absorbed. Begin adding the hot vegetable stock, 1/2 cup at a time, stirring frequently and allowing the liquid to be mostly absorbed before adding more. Continue until rice is tender but still slightly firm to the bite, about 18–20 minutes total. Remove from heat.
Stir in 1 cup grated Parmesan, lemon zest (if using), chopped parsley, 1 teaspoon salt and 1/4–1/2 teaspoon black pepper. Mix well, taste and adjust seasoning. Spread the cooked rice onto a shallow tray or baking sheet to cool to room temperature, then refrigerate uncovered for at least 1 hour (or up to overnight) so it firms for shaping.
Shape and coat
Set up a breading station with flour in one shallow bowl, beaten eggs in a second, and breadcrumbs in a third. Portion chilled rice using a 1/4-cup measure (about 2 oz) and form into compact balls (or slightly flattened domes) with lightly oiled hands; the rice should hold together—press firmly. Roll each rice ball first in flour, shaking off excess, then dip into beaten egg, then coat thoroughly with breadcrumbs. For an extra-crisp shell, repeat the egg and breadcrumb step for a double coat.
Fry the arancini
Pour neutral oil into a medium heavy saucepan or deep skillet to a depth of about 1.5–2 inches and heat to 170–180°C (340–355°F) or until a breadcrumb sizzles and browns slowly. Fry arancini in batches (do not overcrowd) for 3–4 minutes per batch, turning as needed, until golden brown and crisp. Use a slotted spoon to remove and drain on a wire rack or paper towels. Keep warm in a low oven (100°C / 210°F) if making ahead.
Black truffle sauce
In a small saucepan, melt 2 tablespoons butter over medium heat. Add the minced shallot and cook gently 2–3 minutes until softened and translucent but not browned. Add the crushed garlic and cook 30 seconds until fragrant.
Pour in 1 cup vegetable stock and simmer gently to reduce by about one-third, roughly 5–7 minutes. Lower the heat and stir in 1/2 cup heavy cream. Simmer for 2–3 minutes until slightly thickened. Whisk in 2 teaspoons black truffle paste (or chopped black truffle). Taste and season with 1/2 teaspoon salt and 1/4 teaspoon freshly ground black pepper. If desired, finish with 1 teaspoon black truffle oil for extra aroma. Keep warm over the lowest heat (do not boil) until ready to serve.
Assembly & garnish
Spoon a shallow pool of warm black truffle sauce onto each serving plate (about 1–2 tablespoons per portion). Place 2–3 hot arancini on the sauce. Drizzle a little more sauce over the arancini if desired.
Finish with a light scattering of grated Parmesan and microgreens or chopped parsley. Serve immediately so the exterior remains crisp and the interior is creamy.
