    Cook edamame

    Bring 6 cups water to a rolling boil in a medium pot. Add 1 tablespoon kosher salt. Add the frozen edamame and return to a boil. Cook until bright green and tender about 4–6 minutes for shelled edamame (6–8 minutes for in-pod). Taste one to check doneness.

    Drain the edamame in a colander and immediately rinse under cold running water or transfer to an ice bath to stop cooking. Drain thoroughly and set aside in the colander to remove excess water.

Spicy garlic sauce

    Prepare aromatics

    While the edamame cooks, mince the garlic, grate the ginger, and thinly slice the scallions, keeping whites and greens separate.

    Toast garlic gently

    Heat 1.5 tablespoons neutral oil in a large skillet over medium-low heat. Add the minced garlic and the white parts of the scallion. Cook, stirring often, until fragrant and just golden (about 45–60 seconds). Avoid high heat to prevent burning the garlic.

    Build the sauce

    Add the grated ginger, 1 tablespoon chili garlic sauce, 1.5 tablespoons soy sauce, 0.5 teaspoon dark soy (or a pinch of molasses), 0.5 teaspoon smoked paprika, 1 teaspoon rice vinegar, 1 teaspoon brown sugar (or honey), 0.5 teaspoon sesame oil, and 0.25 teaspoon crushed red pepper flakes (if using) to the skillet. Stir and let the sauce simmer gently for 30–45 seconds so the flavors meld. Taste and adjust — add a small pinch more sugar to balance acidity or more chili sauce for heat.

    Add the drained edamame to the skillet with the sauce and toss over medium heat for 1–2 minutes to warm through and coat the beans evenly. If the pan seems dry, add up to 1 tablespoon water to loosen the sauce.

    Remove from heat. Stir in the green parts of the scallion, toasted sesame seeds, and the zest and juice of half a lime. Taste and season with flaky sea salt to your preference.

    Transfer to a serving bowl. Serve warm or at room temperature. If serving in-pod edamame, provide a small bowl for discarded pods and recommend squeezing the pods to extract the beans while eating.
