Prepare chicken breasts
If chicken breasts are large, butterfly each into two thinner cutlets or pound between plastic wrap to about 1/2 inch thickness for even cooking. Pat dry with paper towels.

Marinate
Place chicken in a shallow dish and pour 1 cup buttermilk and 1 tbs hot sauce over them. Cover and refrigerate for at least 30 minutes and up to 4 hours. This tenderizes and adds a touch of heat.

Make dry mix and wet wash
In a shallow bowl combine flour, cornstarch, 2 tsp spicy dust, 1 tsp smoked paprika, 1 tsp garlic powder, 1/2 tsp onion powder, 1.5 tsp kosher salt, and 1 tsp black pepper. In a separate bowl whisk together eggs and 2 tbsp milk to form an egg wash.

Dredge and double-coat
Remove one piece of chicken from the buttermilk, letting excess drip off. Dredge thoroughly in the seasoned flour mixture, press to adhere, then dip into the egg wash, and return to the flour mixture for a second coating. Place on a wire rack while you heat oil. Repeat with remaining pieces.

Heat oil and fry
Pour vegetable oil into a large skillet to reach about 1/4 to 1/2 inch depth (or use a deep fryer set to 350°F / 175°C). Heat over medium-high until a thermometer reads 350°F or a small pinch of flour sizzles immediately. Fry chicken 3–5 minutes per side depending on thickness until golden brown and internal temperature reaches 165°F (74°C). Adjust heat to maintain oil temperature. Transfer to a wire rack set over a sheet pan and keep warm.
Fresno Chili Honey & Pickles

Make fresno chili honey: In a small saucepan combine 1/4 cup honey, 1 tbs apple cider vinegar, and the sliced fresno chilies. Warm over low heat for 3–4 minutes, stirring, until honey thins and absorbs chili flavor. Do not boil. Remove from heat and let sit for 10 minutes to infuse. If using hot sauce instead of fresh chilies, whisk 2–3 tsp red chile hot sauce into the honey and vinegar while warm.

Prepare pickles: If using store-bought sliced pickles, drain and pat dry. For extra tang, toss slices quickly in 1 tsp of the fresno honey mixture (optional) to add a sweet-spicy contrast.
Smoky Ranch

Whisk together 1/2 cup mayonnaise, 1/4 cup buttermilk, 2 tbsp sour cream, 1/2 tsp smoked paprika, 1/2 tsp dried dill, 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/2 tsp lemon juice, 1/4 tsp kosher salt and 1/4 tsp black pepper until smooth. Taste and adjust thickness with more buttermilk or seasoning. Chill until assembly.

Toast buns: Heat a skillet over medium heat and melt 1/2 tablespoon butter. Split buns and toast cut sides until golden, about 1–2 minutes. Repeat with remaining butter for other bun halves.

Build the sandwich: Spread about 1 tbsp smoky ranch on the bottom bun. Place a lettuce leaf (if using), then the crispy fried chicken. Drizzle 1–2 tsp fresno chili honey over the chicken (more to taste). Top with 4 pickle slices, add another small drizzle of ranch on the top bun, and close the sandwich.

Serve: Let the sandwich rest 1 minute so flavors settle, then serve immediately while hot and crispy. Offer extra fresno honey and smoky ranch on the side.
