Chill and prep
Chill a wine or stemmed glass in the refrigerator for 5–10 minutes beforehand (optional). Lightly wash and pat dry the mint leaves and lime. Cut a lime wheel or wedge for garnish and reserve a small lime wedge for juice.

Muddle mint
Place 4–6 fresh mint leaves in the bottom of the chilled glass. Using a muddler or the back of a spoon, gently press the leaves 3–4 times to release aromatic oils — do not shred them into pieces. This releases fragrance without making the drink bitter.

Add liqueur and lime
Pour 1 tablespoon (approx. 0.5 fl oz) of St‑Germain into the glass over the muddled mint. Add 1/4 oz fresh lime juice (about the juice from a small wedge). Stir briefly (1–2 gentle turns) to combine the liqueur with the mint and lime.

Add ice
Fill the glass with ice cubes, leaving about 1 inch (2.5 cm) of headspace at the top so there is room for sparkling wine and soda.

Top with sparkling wine and soda
Pour 3 oz chilled sparkling wine (Prosecco or Cava) gently into the glass. Top with 1 oz chilled club soda or sparkling water to lighten and lengthen the spritz. Pour slowly to preserve effervescence.

Light stir and adjust
Give the drink 1 gentle stir with a bar spoon to integrate layers without flattening bubbles. Taste quickly; if you prefer it brighter, add another 1/8–1/4 oz fresh lime juice. If sweeter is desired, add a touch more St‑Germain (1/2 tsp increments).

Garnish and serve
Garnish with a fresh lime wheel or wedge on the rim and a small mint sprig tucked into the glass. Serve immediately while the sparkling wine is lively.
