Prepare the Fruits

Peel and dice the mango, papaya, and pineapple into small, bite-sized cubes. Place them in a large mixing bowl.

Roast the Tomato

Preheat your oven to 400°F (200°C). Cut the tomato in half, drizzle with olive oil, and roast for about 15-20 minutes until soft and slightly caramelized. Allow to cool, then chop and add to the mixing bowl.

Prepare Jalapeño and Cilantro

Finely chop the jalapeño, removing seeds for less heat if desired. Roughly chop the cilantro. Add both to the bowl with the fruits and roasted tomato.

Add Lime Juice

Squeeze the lime juice over the mixture in the bowl, and gently toss all ingredients together until well combined.

Serve the Salad

Transfer the Caribbean Mango salad to a serving platter or individual bowls. Garnish with extra lime wedges if desired, and enjoy immediately.
