Potato Chips

Slice potatoes thinly

Using a mandoline set to 1.5 mm (or a very sharp knife), slice the peeled potatoes into very thin rounds. Rinse slices in cold water to remove surface starch until the rinse runs clear.

Soak and dry

Optional: place the potato slices in cold water with 1 tablespoon white vinegar and refrigerate for 10–15 minutes to help them stay crisp. Drain, then lay the slices in a single layer on clean kitchen towels or paper towels and pat thoroughly dry. Any remaining moisture will cause the oil to spit.

Heat oil

Pour about 1 cup neutral oil into a heavy-bottomed skillet or a small pot to a depth of ~1 inch. Heat to 350°F (175°C). If you don't have a thermometer, test with one potato slice — it should sizzle immediately and float.

Fry in batches

Working in small batches so the oil temperature stays steady, fry the potato slices for 2–3 minutes, stirring gently, until they are golden and crisp. Use a slotted spoon to transfer chips to a paper towel–lined tray. Immediately sprinkle with fine sea salt while still hot. Let chips cool completely; they will crisp further as they cool.

Chill serving bowl

Place a small shallow serving bowl or ramekin on a bed of crushed ice to keep the caviar cool while plating. Alternatively, chill the bowl in the refrigerator for 10–15 minutes before serving.

Prepare crème fraîche

Stir the crème fraîche with half of the chopped chives and the lemon zest. Taste and add a small pinch of black pepper if desired; do not over-season, as caviar is delicate.

Plate

Place the chilled bowl on its ice bed. Spoon the crème fraîche into the bowl (about 1 ounce). Using a non-metallic spoon, gently transfer the osetra caviar on top of the crème fraîche, distributing it evenly. Sprinkle the remaining chives around or over the caviar and finish with a very light dusting of black pepper.

Serve with chips

Arrange a nest of freshly fried potato chips around the caviar bowl or on individual small plates. Guests should use the provided mother-of-pearl or non-metallic spoon to place a small amount of caviar and crème fraîche on a chip and eat immediately so the chip retains its crispness.

Notes & Timing

Make the potato chips up to 1 hour ahead and store in a single layer at room temperature to maintain crispness. Keep the caviar chilled until the last minute and do not mix with acid or strong seasonings. Total hands-on time is short; assemble just before serving to preserve texture and temperature contrasts.
