Method
Tomato relish
Make relish
Halve the cherry tomatoes (or dice vine tomatoes). Finely dice the red onion. In a bowl combine tomatoes and onion with lemon juice, olive oil, sugar, salt and black pepper. Stir and taste, adjust seasoning. Tear or finely chiffonade basil and stir through if using. Let sit at room temperature for at least 10 minutes so flavors meld while you cook the other components.

Prepare bacon
Heat a large nonstick or cast-iron skillet over medium heat. Lay bacon slices in a single layer and cook, turning occasionally, until browned and crisp to your liking, about 6–8 minutes. Transfer to a paper towel-lined plate to drain. Keep skillet with bacon fat for added flavor or wipe out and use fresh oil if preferred.
Cook hash browns
If using frozen hash browns: heat 1 tbs neutral oil in a separate skillet over medium-high heat. Add hash browns and press gently; cook 3–4 minutes per side until golden and crisp. If using fresh shredded potato patties: squeeze out excess moisture, season lightly with 1/4 tsp salt, and fry in 1 tbs oil 4–5 minutes per side until deep golden. Transfer to paper towel and keep warm.
Fry eggs
Wipe skillet clean or use a nonstick pan. Reduce heat to medium-low and add 1 tsp butter and a little oil to prevent burning. Crack eggs into the pan and fry sunny-side up until whites are set but yolks remain runny, about 3–4 minutes. Season each egg with a pinch of salt and 1/8 tsp black pepper. If you prefer slightly set yolks, cover pan for 30–60 seconds.
Toast buns & melt cheese
Split potato buns and lightly toast cut sides in a clean skillet or under a broiler until golden. Place one slice of cheddar on each bun base while still hot so it begins to melt. Alternatively, briefly place toasted bun halves (cheese on base) under broiler for 20–30 seconds to fully melt.
Assemble rolls
On each cheese-topped bun base place: one cooked hash brown, two slices of cooked bacon (overlap), then a fried egg. Spoon about 2–3 tablespoons of tomato relish over the egg (or on the top bun) and finish with the bun top. Press gently to compact. If serving immediately, cut in half and serve hot.
