Prepare Oysters & Plating

Chill and prepare serving bed

Fill a large shallow serving platter or tray with crushed ice to create a stable chilled bed for the oysters. Spread evenly so each oyster can sit level.

Shuck oysters

Using an oyster knife and a thick towel or glove, hold each oyster flat side up. Insert the knife at the hinge, twist gently until it pops, run the blade along the top shell to cut the muscle, lift off top shell, discard. Slide the knife under the oyster to free the bottom muscle and level the oyster in the shell, keeping as much liquor (juices) as possible. Arrange oysters on the chilled ice bed with cups facing up.

Lemon wedges

Cut 2 lemons into 8–12 wedges and arrange on the platter around the oysters. Reserve a few thin lemon slices if you prefer for individual presentation.

Make Limoncello Mignonette

In a small bowl combine 3 tablespoons white wine vinegar and 1 tablespoon limoncello. The limoncello adds bright lemon aroma without adding acidity; adjust if you prefer stronger lemon flavor.

Add 2 tablespoons finely minced shallot to the vinegar-limoncello mixture. The shallot should be minced very small so it sits nicely on the oyster without overpowering.

Stir in 1 teaspoon sugar and 1 teaspoon sea salt until dissolved. Taste and adjust: the mignonette should be tangy with a touch of sweetness to balance salt.

Whisk in 1 teaspoon extra virgin olive oil to round the acidity and give a slight mouthfeel; this is optional but recommended for balance.

Season with 1 teaspoon freshly ground black pepper and fold in 1 tablespoon very finely snipped fresh chives. Stir and let the mignonette rest at room temperature for 5–10 minutes to allow flavors to meld.

Transfer the mignonette to a small serving bowl and place on the platter with the oysters, or spoon a small amount (about 1/2 teaspoon) directly onto each oyster just before serving. Keep leftover mignonette chilled and use within 12–24 hours.
