Prepare aromatics

Finely chop 1/2 cup onion. If you prefer a milder flavor, sauté the chopped onion in 1 teaspoon oil over medium heat for 2–3 minutes until softened and cooled before adding to the meat; otherwise use raw for more onion flavor.

Soak breadcrumbs

In a small bowl combine 0.5 cup panko breadcrumbs and 3 tbsp milk. Let sit 3–5 minutes until breadcrumbs absorb milk.

Mix meat

In a large bowl add 1 lb ground beef, the soaked breadcrumbs, 1 beaten egg, 0.5 cup finely chopped onion, 1 tbsp Worcestershire sauce, 0.5 tsp garlic powder, 1 tsp kosher salt, and 0.5 tsp black pepper. Gently but thoroughly combine with your hands or a spoon; avoid overworking to keep steaks tender.

Form patties

Divide mixture into 4 equal portions (about 4 oz/each) for thinner steaks or 2 portions for thicker ones. Shape into oval/round patties about 3/4-inch thick. Press a shallow indentation in center of each to keep them from bulging while cooking.

Sear

Heat 1 tbsp vegetable oil in a large skillet over medium-high heat until shimmering. Add patties without crowding (work in batches if needed). Cook 3–4 minutes on first side until a deep brown crust forms. Flip and reduce heat to medium. Cook another 3–4 minutes for medium doneness (internal temperature ~150°F/66°C). Adjust time for desired doneness. Remove patties to a plate and tent loosely with foil while making gravy.

Sauté onions

In the same skillet (do not wipe out; leave browned bits), add 2 tbsp unsalted butter and 0.25 cup thinly sliced onion. Cook over medium heat for 2–3 minutes until softened and beginning to brown, scraping up browned bits from the pan with a wooden spoon.

Make roux

Sprinkle 2 tbsp all-purpose flour over the softened onions and butter. Stir constantly for 1–2 minutes until the flour turns a light golden brown and no raw flour smell remains — this cooks the roux and builds flavor.

Add liquids and season

Gradually whisk in 1.5 cups beef broth, making sure to incorporate any lumps. Add 1 tsp Worcestershire sauce, 1 tsp soy sauce, 1 tsp fresh thyme (optional), 0.25 tsp salt and 0.25 tsp black pepper. Bring to a gentle simmer and cook 3–5 minutes until the gravy thickens to coat the back of a spoon. Taste and adjust seasoning.

Finish

Return the hamburger steaks to the skillet, spooning gravy over them. Simmer together over low heat 2–3 minutes to reheat and meld flavors. If gravy is too thick, stir in up to 2 tbsp additional beef broth or water. Serve steaks topped with gravy.

Plate hamburger steaks over 1 cup mashed potatoes per serving and spoon additional gravy over the top. Serve with steamed green beans or peas (about 1/2 cup per serving). Garnish with chopped parsley if desired.
