Mix dry ingredients
Measure all rub ingredients precisely. In a medium bowl combine smoked paprika, brown sugar, kosher salt, coarse black pepper, garlic powder, onion powder, ground cumin, dry mustard powder, and cayenne pepper.
Whisk the mixture thoroughly for 30–45 seconds until the brown sugar is evenly distributed and there are no clumps. Taste a pinch to check balance (very small amount) and adjust salt or cayenne to your preference.
Transfer the rub to an airtight container or jar. Label with date. The rub keeps well at room temperature for up to 3 months; refrigerate for longer storage (up to 6 months). Use approximately 1–2 tbs per pound of meat when seasoning.

Combine and simmer
In a small saucepan combine ketchup, apple cider vinegar, brown sugar, molasses, Worcestershire sauce, smoked paprika, garlic powder, onion powder, hot sauce (if using), and salt. Whisk until smooth.
Bring the sauce to a gentle simmer over medium-low heat, then reduce heat to low. Simmer uncovered, stirring occasionally, for 10–15 minutes until slightly thickened and flavors have melded.
Taste and adjust: add more vinegar for tang, more sugar or molasses for sweetness, or more hot sauce/paprika for heat/smoke. Remove from heat and let cool. Store in a jar in the refrigerator for up to 2 weeks.
