Prepare the Chicken

In a large pot, add the chicken and water. Bring to a boil, then reduce to a simmer. Cook for about 30 minutes, or until the chicken is cooked through. Remove chicken, shred it, and set aside.

Make the Guajillo Broth

In a separate pot, add the guajillo chiles and enough water to cover them. Boil for 10 minutes until softened. Blend the chiles with a little broth from the chicken pot until smooth.

Combine Ingredients

In the pot with the chicken broth, add the hominy and the blended guajillo sauce. Stir well and let it simmer for another 15 minutes. Adjust seasoning with salt to taste.

Prepare Toppings

Slice the romaine lettuce and radishes. Cut the limes into wedges.

Serve

Ladle the pozole into bowls, top with sliced lettuce, radishes, and tortilla strips. Serve with lime wedges on the side.
