Marinated mushrooms & peppers
Prepare vegetables
Clean mushrooms by wiping with a damp cloth or quickly rinsing and patting dry. Trim stems and cut larger mushrooms into halves or quarters so pieces are roughly 1 to 1 1/2 inches. Slice red and yellow bell peppers into 1/2" strips. Thinly slice the red onion and, if using, slice the banana or Italian pepper into rings.
Blanch or roast peppers (optional)
If you prefer softer, slightly charred peppers: toss pepper strips with 1 tablespoon olive oil and a pinch of salt, spread on a rimmed baking sheet, and roast at 425°F (220°C) for 10–12 minutes until edges are lightly charred and softened. Allow to cool. Alternatively, briefly blanch peppers in boiling water for 2 minutes then plunge into ice water; drain well.
Cook mushrooms
Heat a large sauté pan over medium-high heat and add 1 tablespoon olive oil. When oil shimmers, add mushrooms in a single layer (work in batches if needed). Sauté without moving for 2–3 minutes to develop color, then stir and continue cooking 3–4 minutes until mushrooms are lightly browned and most moisture has evaporated. Remove from heat and let cool slightly.
Marinade / dressing
Make the marinade: In a bowl or jar whisk together red wine vinegar, lemon juice, Dijon mustard, honey, minced garlic, dried oregano, crushed red pepper flakes, kosher salt and black pepper. Slowly whisk in the olive oil until emulsified (or shake vigorously in a sealed jar). Stir in the chopped parsley and basil if using.
Combine vegetables and dressing: Place the cooked mushrooms, prepared peppers and sliced red onion in a large bowl. While the vegetables are still slightly warm, pour enough marinade to coat them (about 3/4 to 1 cup) so they absorb flavor; reserve remaining marinade. Gently toss to combine so vegetables are evenly coated.
Marinate: Cover the bowl and refrigerate at least 2 hours, preferably overnight, to let flavors develop. If time is limited, allow at least 30 minutes for a quick soak; stirring once or twice while marinating helps distribute flavors.
Finishes & garnish
Finish and serve: Before serving, taste and adjust seasoning with salt and pepper. Stir in drained capers and toasted nuts. If using, sprinkle shaved Parmesan over the salad and drizzle 1–2 tablespoons of the reserved marinade for extra gloss. Let the salad come to near room temperature for 15–20 minutes before plating for best flavor.
Storage: Store leftover marinated mushrooms and peppers in an airtight container in the refrigerator for up to 4–5 days. Bring back to room temperature or briefly toss with extra marinade before serving.
