In a large mash tun, combine the pale malt and caramel malt with 3 liters of hot water. Maintain the temperature at around 65-68°C (149-155°F) for 60 minutes.

Mashing the Grains

After mashing, sparge the grains with an additional 3 liters of hot water to extract the sugars. Collect the liquid, known as wort, in the brew kettle.

Sparging

Bring the wort to a boil and add the Hallertau hops. Boil for 60 minutes, adding the Saaz hops for the last 15 minutes of the boil.

Boiling the Wort

Once the boil is complete, cool the wort quickly using a wort chiller or an ice bath until it reaches around 20°C (68°F).

Cooling the Wort

Transfer the cooled wort to a sanitized fermentation vessel. Sprinkle the Belgian yeast packet on top of the wort. Seal the vessel with an airlock and allow it to ferment at around 20°C (68°F) for 1-2 weeks.

Fermentation

After fermentation is complete, dissolve the corn sugar in a small amount of water and add it to the beer for carbonation. Bottle the beer using sanitized bottles and caps.

Priming and Bottling

Store the bottles in a cool, dark place for 1-2 weeks to allow carbonation to develop.

Conditioning

Chill the bottles in the refrigerator before serving. Pour into a glass and enjoy your homemade Delirium Tremens!
