Prep
Preheat and halve
Preheat a kitchen torch (butane) on standby and ensure fuel is sufficient. Wash the grapefruit. Using a sharp chef's knife, slice each grapefruit in half crosswise to expose the segments. Pat the cut surfaces lightly with a paper towel to remove excess moisture—this helps sugar adhere.
Segment tidy (optional)
If desired, use a small paring knife to trim a thin slice off the exposed membrane and remove any pithy bits so the surface is relatively flat and the sugar will sit evenly.
Topping & torching
Butter and sugar
If using butter, brush about 1/2 teaspoon of melted unsalted butter evenly over the cut surface of each grapefruit half. This adds flavor and helps the sugar brown evenly. Sprinkle approximately 2 tablespoons of cane sugar over each grapefruit half in an even layer, covering the surface but not heaping.
Torching
Hold the torch 2–3 inches (5–8 cm) from the sugar-coated surface and move it continuously in small sweeps to melt and caramelize the sugar. Work until the sugar bubbles and turns a deep amber (about 30–90 seconds depending on torch strength). Avoid holding the flame stationary to prevent burning the sugar or heating the fruit too much.
Finishing
Season and garnish
Optional: sprinkle a very light pinch of sea salt over the caramelized surface to contrast the sweetness. If using honey, drizzle a thin thread around the edges, not over the crisp sugar. Garnish each half with 1–2 small mint leaves tucked to the side.
Serve
Serve the torched grapefruit warm or at room temperature. Provide small spoons so diners can break through the caramelized top and scoop the segments beneath. Best eaten immediately, within 10–15 minutes for optimal texture.
