Prepare and Preheat
Preheat the oven to 350°F (175°C). Lightly grease a 9x5-inch loaf pan and line with parchment paper hanging over two sides for easy removal.
In a medium bowl, sift together the all-purpose flour, baking soda, baking powder, salt, and ground cinnamon (if using). Whisk to combine and set aside.
In a large mixing bowl, mash the ripe bananas with a fork until mostly smooth with a few small lumps remaining (about 1.5 cups mashed). Stir in the granulated sugar, brown sugar, and melted butter until combined.
Add the eggs one at a time, mixing until incorporated. Stir in the vanilla extract and buttermilk (or thinned yogurt).
Fold the dry ingredients into the wet mixture with a rubber spatula just until no streaks of flour remain. Do not overmix. If using nuts, fold in the chopped walnuts or pecans now.
Bake in the preheated oven for 50–65 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (not wet batter). Start checking at 50 minutes to avoid overbaking.
Seasonal Fruit Plate
While the bread bakes or cools, prepare the fruit. Wash and dry all fruit. Hull and slice strawberries, peel and segment mandarins (if using), slice kiwi, and keep blueberries whole. Slice the additional banana just before plating to prevent too much browning.
Arrange 2–3 slices of banana bread on each serving plate. Fan or mound a generous portion (about 1/2 to 3/4 cup) of the prepared seasonal fruit beside the bread. Top fruit with a few fresh mint leaves for aroma and color.
