Prepare glass

Chill a coupe or flute by placing it in the freezer for 5–10 minutes or filling with ice water while you prepare the cocktail.

Dry shake (if using egg white)

In a cocktail shaker, combine Pommery mustard (0.5 tsp), fresh lemon juice (0.5 oz), orange liqueur (0.25 oz), gin (1 oz), dry vermouth (0.25 oz), simple syrup (0.25 tsp) and egg white (0.5 each). Seal and shake vigorously without ice for 15–20 seconds to emulsify and create foam.

Wet shake

Add ice (about 1 cup or enough to fill the shaker) to the shaker. Shake vigorously for 12–15 seconds until well chilled and the outside of the shaker is frosty.

Strain

Double-strain the shaken mixture through a fine mesh strainer into the chilled coupe or flute to remove any ice shards and residual solids from the mustard/egg white.

Top with bubbles

Gently top the cocktail with 3 oz champagne or dry sparkling wine. Pour slowly down the side of the glass so you preserve foam and avoid excessive fizz.

Garnish & Finish

Carefully place a small lemon twist on the rim or float it on the foam. Optionally add a tiny 1/4 tsp dollop of Pommery mustard on the centre of the foam or on the rim for a savory accent — inform guests, as mustard is unexpected on a cocktail.

Serve immediately while sparkling wine is lively. Recommend stirring gently once if mustard separates after sitting briefly.
