Method

Cocktail

1

Prepare mango puree

If using fresh mango, peel and dice one ripe mango. Place mango pieces in a blender and puree until smooth. Strain through a fine mesh sieve for a silkier texture if desired. Measure 2 oz of puree.

2

Muddle aromatics

In a cocktail shaker, add the serrano slices (remove seeds for milder heat) and cilantro leaves. Add the agave syrup and fresh lime juice. Gently muddle 6–8 times to release oils and infuse flavors; avoid pulverizing the cilantro into tiny bits.

3

Build and shake

Add the tequila, mango puree, and a handful of ice (about 1 cup) to the shaker. Secure the lid and shake vigorously for 10–15 seconds until well chilled and slightly frothy from the mango.

4

Strain

Double-strain the cocktail into a rocks glass over fresh ice using a Hawthorne strainer and a fine mesh strainer to remove serrano seeds and cilantro fragments. For a slushy texture option, instead of shaking with ice, blend with 1 cup of crushed ice for 8–10 seconds.

Garnish & Serve

5

Rim the glass: run the lime wedge around the rim of a rocks glass, then dip the rim into coarse salt or Tajín to coat evenly.

6

Garnish: float a thin mango slice on the drink and place a small sprig of cilantro beside it. Add an extra thin serrano slice on top if you want an obvious visual cue of heat.

7

Serve immediately with a short straw and advise guests that the drink has a mild-to-moderate spicy kick from the serrano. Adjust serrano quantity to taste when remaking.
