Prep bread and spread
Bring butter to room temperature if not already soft. Lightly toast both bread slices in a toaster or in a dry skillet for 1–2 minutes until just golden — this helps prevent sogginess and gives structure. Spread Dijon mustard evenly across one side of one slice and spread softened butter on one side of the other slice (buttered side will contact the hot skillet).
Assemble
On the mustard-coated slice, layer the ham evenly, overlapping slightly to cover the slice. Top the ham with the Gruyère, distributing so cheese reaches the edges for even melting. Place the buttered slice on top, buttered side facing out.
Cook
Heat a nonstick or cast-iron skillet over medium-low to medium heat. When warm, place the assembled sandwich in the skillet. Cook for 3–4 minutes until the bottom is golden brown and the cheese begins to melt. Press gently with a spatula or a heavy pan for even contact. Flip the sandwich and continue cooking 2–4 minutes until the second side is golden and the cheese is fully melted. If after flipping the cheese is slow to melt, reduce heat to low and cover the skillet for 1–2 minutes to trap heat.
Rest and slice
Remove sandwich from the skillet and let rest 1 minute to settle the melted cheese. Slice on the diagonal or down the middle. Serve immediately so the cheese is gooey.
Optional garnish/serve
Arrange mixed salad greens on the plate, drizzle with olive oil and a pinch of black pepper. Place cornichons or dill pickles on the side. Serve alongside the hot Ham & Gruyère sandwich.
