Method
Croissants
Warm croissants
Preheat oven to 325°F (160°C). Place 6 croissants on a baking sheet, spaced apart. Bake for 5–8 minutes until just warmed through and slightly crisp on the outside but still tender inside. If using a toaster oven, check after 4 minutes. Remove and let rest 1 minute before serving.
If croissants are refrigerated or frozen, thaw fully before warming. For frozen croissants, allow additional 5–8 minutes in the oven and check frequently to avoid over-browning.
Butter
Soften and portion butter
If butter is cold, cut into 6 even tablespoons and leave at room temperature for 10–15 minutes until soft but still spreadable. For compound butter: mash the softened butter with a pinch of sea salt (optional) using a fork or small bowl until smooth.
Place one tablespoon of softened butter on a small plate or in ramekins for table service so each guest can spread easily.
Jam
Prepare jam
Measure 1 cup of your chosen jam or preserves into a small saucepan if you prefer a looser, spreadable consistency. Add 1 tsp lemon juice and warm gently over low heat for 2–3 minutes, stirring, until slightly thinner and glossy. Do not boil. Alternatively, serve jam at room temperature straight from the jar for a thicker set.
If you prefer to macerate fresh fruit into the jam: combine 1 cup fresh berries or sliced fruit with 1 tsp sugar and 1 tsp lemon juice in a small bowl, let sit 10–15 minutes, then fold into the jarred jam for a fresher topping.
Assembly & Serving
Split and spread
Using a serrated knife, gently slice each warm croissant in half horizontally or lengthwise (as preferred). Spread approximately 1 tablespoon of softened butter onto each half, then spoon 1–2 tablespoons of jam onto the buttered side. Close the croissant and press gently so the jam and butter meld into the layers.
Plating
Arrange croissants on a serving platter. Place remaining jam in a small bowl or ramekin with a serving spoon and the butter on a separate small plate so guests can add more. Garnish with fresh berries, a dollop of soft cheese (if using), and mint leaves for color.
Serve immediately while croissants are warm. Leftover warmed croissants can be stored in an airtight container at room temperature for up to 24 hours or refrigerated for up to 2 days; reheat for 3–4 minutes at 300°F (150°C) to refresh.
