Optional spirit & aromatics
If using the optional vodka for a slightly stronger backbone, add 1/2 oz vodka into a chilled mixing glass. Add 1 tsp rosewater and 1 dash Angostura bitters if using. Stir gently with ice for 10 seconds to lightly integrate and chill, then strain into the chilled coupe. (If not using, skip to next step.)
Pour champagne
Slowly pour 5 oz Pommery Champagne into the chilled coupe or flute at a gentle angle to preserve effervescence. Pouring slowly helps control foam and prevents immediate dissolution of the cotton candy.
Add rose petal accent
Float the 2 reserved edible rose petals on top of the champagne. If you prepared a chiffonade petal, you may carefully drop a few thin strips into the glass for aroma without affecting carbonation significantly.
Top with cotton candy
Immediately before service, place the 1 oz tuft of cotton candy on a small serving spoon or a cocktail pick and gently rest it on the rim of the glass so it slightly hovers above the champagne surface. Alternatively, for a dramatic presentation, drop the cotton candy into the champagne and allow it to dissolve, sweetening and effervescing the drink—note this will increase sweetness and collapse foam quickly.
Service & Notes
Serve immediately after placing the cotton candy. If cotton candy is left exposed it will absorb humidity and collapse; present right away for best texture and visual impact.
Adjust sweetness: If you wish the cocktail less sweet, omit dropping the cotton candy into the drink and instead let guests dissolve small pinches themselves. The optional vodka and bitters balance sweetness and add depth; use to taste.
