Make sandwiches

Prepare bread
Lay 8 slices of bread flat on a clean surface. Spread about 1/2 tablespoon of softened butter evenly on one side of each slice (this will be the outside that touches the pan).

Assemble sandwiches
Place 1 slice of cheese on the unbuttered side of 4 bread slices. If using extras, add 1 slice tomato or 1 slice ham on top of the cheese. Top each with the remaining bread slice, buttered-side-out, to form 4 sandwiches.

Heat a large nonstick skillet or griddle over medium-low heat. Place 2 sandwiches in the pan, leaving space between them. Cook for about 3–4 minutes until the bottom is golden brown and the cheese starts to soften. Using a spatula, press gently and flip each sandwich; cook another 2–3 minutes until the second side is golden and the cheese is melted. If the bread is browning too fast before the cheese melts, reduce heat to low and cover the pan with a lid for 1–2 minutes to trap heat and help the cheese melt.

Transfer finished sandwiches to a cutting board and let rest 1 minute. Repeat cooking with the remaining 2 sandwiches.

Store any leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in a skillet over low heat for best texture, about 3–4 minutes per side, or in a toaster oven at 350°F (175°C) until warmed through.
