Oregano Vinaigrette

Make vinaigrette
In a small bowl or jar combine 3 tablespoons extra-virgin olive oil, 1 tablespoon red wine vinegar, 1 tablespoon finely chopped fresh oregano (or 1/2 teaspoon dried), 1 teaspoon Dijon mustard, 1 minced garlic clove, 1 teaspoon honey (or sugar), 1 teaspoon salt, and 1 teaspoon freshly ground black pepper.

Prepare bread
Slice the ciabatta or sandwich roll horizontally. Lightly brush the cut sides with 1 tablespoon butter or olive oil if desired. Toast the bread cut-side down in a skillet over medium heat until golden and slightly crisp, about 1–2 minutes. Remove and place on a work surface.

Warm salami (optional)
If you prefer the salami slightly warmed and more aromatic, warm a small nonstick skillet over medium heat and lay the 6 slices of Lowry Hill salami in a single layer for 30–45 seconds per side until edges curl slightly and oils are fragrant. Transfer to a paper towel to drain briefly.

Assemble sandwich
On the bottom half of the toasted roll, lay the 2 lettuce leaves to act as a moisture barrier. Drizzle about half of the oregano vinaigrette (about 1 tablespoon) evenly over the lettuce. Arrange the 6 slices of salami over the lettuce, slightly overlapping.

Place the 3 roasted red pepper strips on top of the salami, then add the 3 slices of fresh tomato. Season the tomato lightly with a pinch of salt and a crack of black pepper from the vinaigrette mix if desired.

Top the tomato with the 3 slices of fresh mozzarella. Drizzle the remaining vinaigrette (about 1 tablespoon) over the mozzarella and peppers. Finish with the top half of the toasted roll.

Serve
Press the sandwich gently, cut in half if desired, and serve immediately. If preparing ahead, pack vinaigrette separately and dress just before serving to keep bread from getting soggy.
