Club Sauce

    In a small bowl, whisk together mayonnaise, ketchup, Dijon mustard, pickle relish, hot sauce (if using), and paprika until smooth. Taste and adjust seasoning. Set aside refrigerated until ready to assemble.

    Prepare pan and onions

    Heat a large nonstick or cast-iron skillet over medium-high heat. Add 1 tsp oil. Add the finely chopped onion (0.5 cup) and sauté, stirring occasionally, until translucent and beginning to brown at the edges, about 4–5 minutes. Push the onions to one side of the pan.

    Cook and chop the beef

    Add the ground beef to the hot pan beside the onions. Sprinkle with 1/2 tsp salt and 1/4 tsp black pepper. Break the beef into a loose patty and let it brown undisturbed for 1 minute to develop color. Using a spatula, chop and scrape the beef continuously, mixing with the softened onions, until fully cooked and finely broken up (chopped cheese style), about 3–4 more minutes. Push the mixture into an even layer in the pan.

    Add cheese

    Tear the 2 American cheese slices in half and place them evenly over the hot chopped beef-onion layer. Cover the pan briefly with a lid or a sheet pan for 30–45 seconds to help the cheese melt into the meat. Once melted, use the spatula to scrape the cheesy chopped beef into a loose roll or pile that will fit the roll.

    Toast the roll

    While the cheese melts, slice the roll lengthwise leaving a hinge if desired. In a separate small skillet or after wiping the main pan, melt 1 tbsp butter over medium heat. Place the roll cut-side down and toast until golden and crisp, about 1 minute. Remove from heat.

    Assemble the sandwich

    Spread about half of the prepared club sauce onto the bottom half of the toasted roll and the remaining sauce on the top half (adjust to taste). Spoon the cheesy chopped beef mixture onto the bottom half, pressing lightly so it fills the roll. Top with shredded iceberg lettuce (1/2 cup) and 3 tomato slices. If using, add the thin yellow onion slices for extra bite. Close the sandwich, press gently to compact, and slice in half if desired.

    Serve immediately while hot, with extra club sauce on the side if desired.
