Method

Cucumber Green Tea Syrup

    Brew syrup base

    Combine 1 cup water and 1 cup granulated sugar in a small saucepan over medium heat. Stir until the sugar completely dissolves and the mixture just comes to a simmer (do not boil vigorously).

    Steep tea

    Remove the pan from heat, add the green tea leaves or tea bags, cover, and let steep for 3 minutes for delicate green tea (up to 4 minutes for stronger flavor).

    Add cucumber

    Strain out the tea leaves or remove the tea bags, then stir in the roughly chopped cucumber. Use an immersion blender or small countertop blender to puree the cucumber into the warm syrup until smooth.

    Finish and chill

    Optional: stir in lime zest. Strain the syrup through a fine-mesh sieve or cheesecloth into a clean jar to remove solids. Let cool to room temperature, then refrigerate until chilled. Syrup will keep refrigerated in a sealed container for up to 7 days.

Cocktail Assembly

    Prepare glass

    Chill a coupe or rocks glass by filling it with ice and cold water, or by placing it in the freezer for a few minutes.

    Shake

    In a cocktail shaker, add 2 oz Yola mezcal, 0.75 oz kumquat liqueur, 0.75 oz fresh lime juice, and 0.75 oz cucumber green tea syrup. Fill the shaker with ice (about 6 cubes). Secure the lid and shake vigorously for 12–15 seconds until well chilled and slightly diluted.

    Double strain

    Discard the ice/water from the chilled glass. Double-strain the cocktail into the chilled coupe or rocks glass using a Hawthorne strainer and a fine-mesh sieve to catch any ice shards or cucumber pulp for a silky texture.

    Garnish and serve

    Float a thin cucumber slice on the surface and add a kumquat wheel or a small kumquat twist on the rim. Serve immediately.
