Preparing the Meat

    Marinate the Steak

    In a bowl, mix together olive oil, minced garlic, chopped rosemary, chopped thyme, salt, black pepper, and lemon juice. Place the beef ribeye steak in a large zip-lock bag or a shallow dish and pour the marinade over it. Seal or cover and let it marinate in the refrigerator for at least 2 hours, preferably overnight for maximum flavor.

    Cook the Steak

    Preheat the grill or a heavy skillet over medium-high heat. Remove the steak from the marinade and let any excess marinade drip off. Grill or pan-sear the steak for about 5-7 minutes on each side for medium-rare, or until desired doneness. Use a meat thermometer to check for an internal temperature of 130°F (54°C) for medium-rare.

    Rest the Steak

    Once cooked, remove the steak from the grill or skillet and let it rest for at least 10 minutes before slicing. This helps retain the juices.

Preparing the Vegetarian Option

    Marinate the Mushrooms

    In a bowl, combine balsamic vinegar, chopped basil, salt, and pepper. Add the portobello mushrooms and let them marinate for at least 30 minutes.

    Cook the Mushrooms

    Preheat the grill or a skillet over medium heat. Grill or sauté the mushrooms for about 5-6 minutes on each side until they are tender and have nice grill marks.

    Serve

    Serve the grilled portobello mushrooms alongside the steak or as a standalone dish, garnished with additional fresh basil if desired.
