Cooking Pasta

    Boil Water

    In a large pot, bring 4-6 cups of salted water to a boil.

    Cook Pasta

    Add 2 cups of pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain Pasta

    Once cooked, drain the pasta in a colander and set aside. Reserve a cup of pasta water for later use.

Sautéing Vegetables

    Prepare Vegetables

    While the pasta is cooking, chop the zucchini and bell pepper into bite-sized pieces. Mince the garlic.

    Sauté Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

    Add Zucchini and Bell Pepper

    Add the chopped zucchini and bell pepper to the skillet. Sauté for about 5 minutes until they start to soften.

    Add Cherry Tomatoes and Spinach

    Add the cherry tomatoes and spinach to the skillet. Cook for an additional 3-4 minutes until the spinach wilts and the tomatoes soften.

Combining Ingredients

    Add Marinara Sauce

    Pour in the marinara sauce and stir to combine. Allow it to simmer for 2-3 minutes.

    Combine Pasta

    Add the drained pasta to the skillet, tossing to coat it in the sauce and vegetables. If the mixture is too dry, add reserved pasta water a little at a time until desired consistency is reached.

    Season and Serve

    Season with salt and black pepper to taste. If desired, sprinkle with Parmesan cheese before serving.
