Chicken Marinade

    In a bowl, combine yogurt, minced garlic, lemon juice, cumin, paprika, salt, black pepper, and olive oil. Mix well. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.

Scuppernong Amba

    Prepare Scuppernong Amba

    In a blender, combine scuppernong grapes, vinegar, minced garlic, and salt. Blend until smooth. Adjust seasoning to taste and set aside.

Cuke Tiger Salad

    Make Cuke Tiger Salad

    In a bowl, combine chopped cucumber, tomato, and red onion. Add chopped dill, lemon juice, olive oil, and salt to taste. Toss gently to combine and set aside.

Chermoula

    Prepare Chermoula

    In a bowl, mix chopped cilantro, cumin, paprika, lemon juice, olive oil, and salt. Adjust seasoning as needed. Set aside.

Sweet Potato

    Roast the Sweet Potato

    Preheat the oven to 200°C (400°F). In a baking dish, toss cubed sweet potatoes with olive oil, salt, and málà onion powder. Bake for 25-30 minutes or until tender and lightly caramelized, turning halfway through.

Mukhalal

    Prepare Mukhalal

    In a small bowl, mix tamarind paste with water and salt to taste. Stir until smooth and set aside.

Grilling Chicken

    Preheat a grill or grill pan over medium-high heat. Remove chicken from marinade and grill for 6-8 minutes per side, or until fully cooked and grill marks appear. Let rest for 5 minutes before slicing.
