Empty the ice water from the chilled glass and strain the cocktail mixture into it. Top with sparkling water.

Open the Pinot Noir and Chardonnay bottles. Pour equal glasses of each wine for two servings.

Chill a rocks glass by filling it with ice water. Set aside while preparing the cocktail.

In a mixing glass, combine bourbon, sweet vermouth, and Angostura bitters.

Fill the mixing glass with ice cubes and stir gently for about 30 seconds.

Empty the ice water from the chilled rocks glass and strain the nightcap mixture into it.
