Pork Belly Preparation

    Preheat your oven to 160°C (320°F).

    Pat the pork belly dry with paper towels to ensure crispy skin.

    Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat.

    Rub salt, black pepper, garlic powder, and onion powder all over the pork belly, making sure to get it into the scored skin.

    Place the pork belly in a roasting pan, skin side up.

    In a bowl, mix the apple cider vinegar and water. Pour this mixture into the bottom of the roasting pan.

    Cover the pan tightly with aluminum foil and place in the preheated oven.

    Slow-cook for approximately 2.5 to 3 hours, or until the meat is tender.

    Remove the foil and increase the oven temperature to 240°C (464°F).

    Roast for an additional 30-45 minutes or until the skin is crispy and golden brown.

    Remove from the oven and let rest for 10-15 minutes before slicing.

Apple Sauce Preparation

    While the pork is roasting, prepare the apple sauce.

    In a large pot, combine the chopped apples, sugar, cinnamon, and lemon juice.

    Add a splash of water to prevent sticking and cook over medium heat.

    Cover the pot and simmer for 20-25 minutes or until the apples are soft.

    Mash the apples with a fork or potato masher until you reach your desired consistency.

    Taste and adjust sweetness if necessary. Serve warm or at room temperature.
