Pasta and Vegetables

Method

Cooking Instructions

  1. 1

    Cook the Pasta

In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

  2. 2

    Prepare the Vegetables

While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

  3. 3

Sauté the Bell Peppers and Carrots

Add the sliced bell peppers and julienned carrots to the skillet. Sauté for about 5 minutes until they start to soften.

  4. 4

    Add Zucchini and Tomatoes

Stir in the sliced zucchini and halved cherry tomatoes. Cook for an additional 3-4 minutes until the zucchini is tender.

  5. 5

    Incorporate Spinach

Add the fresh spinach leaves and cook for an additional 2 minutes until wilted.

  6. 6

    Combine with Pasta

Add the cooked pasta to the skillet with the sautéed vegetables. Toss everything together gently to combine.

  7. 7

    Season and Serve

Season the mixture with salt, black pepper, and fresh basil. Add grated Parmesan cheese and toss again until well combined. Serve warm.
