Prepare the Meatballs

    Mix Meatball Ingredients

    In a bowl, combine the lap Chong, ground pork, minced garlic, grated ginger, soy sauce, green onion, salt, and black pepper. Mix until well combined.

    Form Meatballs

    Shape the mixture into small meatballs, about 1 inch in diameter. Set aside.

Make the Soup Base

    Sauté Aromatics

    In a large pot, heat the olive oil over medium heat. Add minced garlic and grated ginger, cooking until fragrant, about 1 minute.

    Add Broth and Greens

    Pour in the chicken broth and bring to a boil. Add the chopped winter greens and bok choy. Simmer for about 5 minutes until the greens are tender.

    Cook Meatballs

    Gently add the meatballs to the simmering soup. Cook for 10-12 minutes until the meatballs are cooked through.

Prepare Pickled Fennel

    Combine Pickling Ingredients

    In a saucepan, combine white vinegar, sugar, and salt. Heat until the sugar dissolves.

    Pickle the Fennel

    Place the sliced fennel in a jar and pour the hot vinegar mixture over it. Allow to cool and then refrigerate for at least 30 minutes.

Serve the Soup

    Plate the Soup

    Ladle the soup into bowls, ensuring each bowl has meatballs and greens.

    Garnish

    Top each bowl with sliced scallions, a drizzle of You Po, and a sprinkle of crispy rice furikake. Serve with pickled fennel on the side.
