Salad Preparation

Prepare the Chicory
Wash the chicory leaves thoroughly under cold water. Pat dry with a paper towel and tear into bite-sized pieces. Place in a large salad bowl.

Prepare the Satsuma
Peel the satsuma oranges and separate the segments. If desired, cut each segment in half for easier eating. Add the satsuma segments to the bowl with the chicory.

Prepare the Turnip
Peel the turnip and slice it thinly using a mandoline or knife. You can also julienne the turnip for a different texture. Add the turnip slices to the salad bowl.

Prepare the Mushrooms
Clean the mushrooms with a damp cloth and slice them thinly. Add the sliced mushrooms to the salad bowl.

Prepare the Green Onions
Trim the ends of the green onions and slice them thinly. Add to the salad bowl.

Prepare the Cilantro
Rinse the cilantro under cold water, shake off excess water, and roughly chop. Add to the salad bowl.

Mix the Dressing
In a small bowl, combine the Dan Dan sauce, herb vinaigrette, and black clam baharat. Whisk together until well combined.

Drizzle the dressing over the prepared salad and toss gently to combine, ensuring all ingredients are coated.
