Prepare the Mixture
Preheat the oven to 350°F (175°C). In a large mixing bowl, cream together the unsalted butter, sugar, and brown sugar until light and fluffy.

Mix Dry Ingredients
In a separate bowl, whisk together the cornmeal, flour, baking powder, and salt.

Combine and Bake
Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the muscadine jam, then pour the batter into a greased baking dish. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
Squash Seed Granola

Preheat and Prepare Baking Sheet
Preheat the oven to 325°F (160°C) and line a baking sheet with parchment paper.

Mix Ingredients
In a large mixing bowl, combine the squash seeds, oats, honey, melted coconut oil, cinnamon, and salt. Stir until all ingredients are evenly coated.

Bake Granola
Spread the mixture evenly on the prepared baking sheet. Bake for 20-25 minutes, stirring halfway through, until golden brown. Allow to cool before serving.
Aji Dulce Coulis

Prepare Ingredients
Remove the stems and seeds from the aji dulce peppers and chop them coarsely. Peel and mince the garlic cloves.

Blend the Coulis
Transfer the mixture to a blender and puree until smooth. Adjust seasoning if needed.
Hibiscus Garnish

Prepare Hibiscus Tea
In a saucepan, bring 4 cups of water to a boil. Add the dried hibiscus flowers and reduce heat to a simmer. Let steep for 15 minutes.

Sweeten and Strain
Stir in the sugar until dissolved. Strain the mixture to remove the flowers and allow it to cool.
