prepare and slice
Remove the mozzarella from its packaging and pat dry with paper towels to remove excess moisture. Place on a cutting board and slice the block into 12 equal sticks (about 3/4–1 inch by 3/4–1 inch by 3–4 inches), keeping sizes uniform for even serving.
arrange and brush
Place the mozzarella sticks on a rimmed baking sheet lined with parchment or a silicone mat, spacing them so they are not touching. Using a pastry brush or the back of a spoon, lightly brush each stick with the extra-virgin olive oil, coating all exposed surfaces.
season
Evenly sprinkle the dried oregano over the oiled sticks, then distribute the minced garlic across them. Follow with a light sprinkle of the pink salt and a pinch of freshly ground black pepper on each stick. Finish by shaving or sprinkling the shaved Parmesan over the top so it adheres to the oiled surface.
chill (optional)
For best presentation and to help flavors meld, chill the prepared sticks on the baking sheet for 10–15 minutes in the refrigerator. This also helps the cheese maintain shape when served (skip chilling if serving immediately).
serve
Transfer the seasoned cheese sticks to a serving plate or board. If desired, add an extra light drizzle of olive oil and a final pinch of oregano or shaved Parmesan for presentation. Serve immediately with the marinara dipping sauce on the side.
Marinara dipping sauce
If using store-bought marinara, transfer 1 cup to a small sauce bowl. Warm gently in the microwave for 20–30 seconds or on the stovetop over low heat until just warmed through. Stir in red pepper flakes and fresh basil if using. Taste and adjust seasoning.
Place the warm or room-temperature marinara in a shallow dipping bowl and set alongside the prepared cheese sticks for serving.
