Method
Prepare Dough / Oven
Preheat and prepare
Place a pizza stone or inverted baking sheet in the oven and preheat to 475°F (245°C) for at least 30 minutes. If using a pizza peel or work surface, dust it lightly with the all-purpose flour.
If using refrigerated dough, let it sit at room temperature for 20–30 minutes so it’s easier to stretch. If using homemade dough, stretch or roll into a 12-inch round (or desired shape) about 1/8–1/4 inch thick on the floured surface.
Sauce & Cheese Assembly
Apply barbecue sauce
Transfer stretched dough to a lightly floured peel or baking sheet. Spread the barbecue sauce evenly over the dough, leaving a 1/2-inch border for the crust. Use about 3 tablespoons for a 12-inch pizza; adjust to taste.
Add cheeses
Sprinkle the shredded mozzarella evenly over the sauced surface, covering most of the pie but not the crust edge. Scatter the crumbled gorgonzola in small clusters on top of the mozzarella so the blue-cheese flavor pops in bites.
Topping Placement
Add roasted chicken
Evenly distribute the shredded roasted chicken over the cheese layer. If the chicken is cold, warm it briefly in a microwave or skillet to avoid cooling the pizza too much.
Onions and banana peppers
Scatter the thinly sliced red onions and sliced banana peppers over the chicken. Keep onion slices fairly thin so they cook through during baking and become slightly sweet and tender.
Season toppings lightly with the salt and black pepper. If you like heat, sprinkle the optional red pepper flakes sparingly.
Baking
Brush crust and slide into oven
Brush the exposed crust with a teaspoon of olive oil to promote browning. Carefully slide the pizza onto the preheated pizza stone or inverted baking sheet.
Bake
Bake at 475°F (245°C) for 10–12 minutes, or until the crust is golden and cheese is melted and bubbling. Baking time varies with oven and thickness—watch for a slightly charred crust edge and a nicely caramelized bottom.
Finish and rest
Remove pizza from oven and let rest on a cutting board for 2–3 minutes to let the cheese set slightly, which makes slicing cleaner.
