Prepare dry ingredients
In a large mixing bowl, whisk together the all-purpose flour, almond flour, powdered sugar, and sea salt until evenly combined. This builds a tender, slightly nutty base that will complement floral notes.
Cut in butter
Add the cold, cubed unsalted butter to the dry mixture. Using a pastry cutter, two forks, or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces. Work quickly to keep butter cold for a flaky crust.
Add wet ingredients
Whisk together the egg yolk, cold water, and vanilla extract in a small bowl. Sprinkle the liquid over the crumb mixture and gently fold with a spatula until the dough just comes together. If the dough feels dry, add up to 1 additional teaspoon of cold water, 1 tsp at a time. Avoid overworking the dough.
Form and chill
Turn the dough out onto a lightly floured surface and press into a flat disk about 1-inch thick. Wrap tightly in plastic wrap and refrigerate for at least 30 minutes (up to 2 hours). Chilling relaxes gluten and firms butter for a tender, flaky crust.
Roll and shape
Lightly flour a work surface and roll the chilled dough to a 1/8-inch thickness, rotating and flouring as needed to prevent sticking. Transfer the dough to a 9-inch tart pan with removable bottom: gently lift and press the dough to fit the pan, allowing 1/2-inch overhang. Trim excess with a knife or by rolling the rolling pin over the top to remove the extra.
Chill the assembled crust
Place the tart pan with the lined dough back into the refrigerator for 20–30 minutes to firm up again. This prevents shrinkage during baking.
Blind-bake
Preheat the oven to 375°F (190°C). Prick the bottom of the chilled crust lightly with a fork. Line the crust with parchment paper or foil and fill with pie weights or dried beans. Bake for 15 minutes. Remove the weights and parchment, then continue baking 8–10 minutes more, until the edges are light golden. For a slightly deeper color, bake an extra 2–3 minutes, watching carefully.
Cool
Remove the crust from the oven and transfer to a cooling rack. If you want maximum crispness, brush the interior with a thin layer of melted white chocolate or apricot glaze (optional) and let it set before decorating.

Prepare flowers
Gently rinse edible petals under cold water to remove any dust or insects. Pat dry thoroughly on paper towels. If using whole small flowers, remove stems; for large petals, trim to desired sizes. Ensure all flowers are pesticide-free and labeled edible.
Egg wash and sugar
Lightly brush the top edge and rim of the cooled crust with the beaten egg white. This creates a tacky surface for petals to adhere and be slightly preserved. If you want a crystallized look, lightly brush individual petals with a tiny bit of egg white and dip in granulated sugar, then let them dry on parchment while you finish the next steps.
Arrange petals
Starting from the outer edge of the tart, arrange a ring of larger petals, overlapping slightly. Fill toward the center with smaller petals and whole small flowers to create a layered, garden-like effect. Sprinkle the lemon zest evenly over the petals to add a bright aromatic note that pairs with floral flavors.
Optional glaze and finishing sugar
If you used crystallized petals or want a glossy finish, very lightly brush the arranged petals with a neutral apricot glaze or a thin sugar syrup (1 tbs sugar dissolved in 1 tbs hot water). Avoid soaking petals — use a light hand. Sprinkle the tart rim and exposed crust edge with the remaining granulated sugar for a touch of sparkle.
Serve
Chill the tart in the refrigerator for 15–20 minutes to set any glaze and let flavors settle. Slice with a hot, dry knife for clean cuts. Serve the tart chilled or at cool room temperature. Leftovers: store covered in the refrigerator up to 2 days to preserve petal freshness; remove petals before storing if you plan longer storage of the crust.
