Prepare the cheese filling
In a large mixing bowl combine the shredded mozzarella, softened cream cheese, grated Parmesan, garlic powder, onion powder, dried parsley, kosher salt, and black pepper. Mix thoroughly until uniform and slightly sticky. Use a handheld mixer on low for 20–30 seconds if needed to fully combine.
Fill the sticks
If using pre-baked long breadsticks or trimmed soft white bread, slice a shallow lengthwise pocket into each stick without cutting through (about 3/4 of the way). Spoon or pipe about 2 tablespoons of the cheese mixture into each pocket. Press gently so the filling is even and flush with the stick surfaces. For breadless 'stick' option, form cheese into 24 small log shapes (about 3–3.5 inches long) on parchment and chill until firm (15–20 minutes).

Set up breading stations
Place the all-purpose flour in a shallow bowl and season with 1/2 tsp salt and 1/4 tsp black pepper. In a second bowl whisk together the eggs and milk until smooth. In a third bowl combine panko, Italian breadcrumbs, dried oregano, paprika, optional cornmeal, and remaining 1/2 tsp salt.
Bread the filled sticks
Working with one stick at a time, dust the filled stick lightly in flour, shaking off excess. Dip into the egg wash, letting excess drip off, then press into the breadcrumb mixture to coat completely, pressing firmly so breadcrumbs adhere. For extra durability and a thicker crust, repeat the egg wash and breadcrumb steps once more to double-coat. Place finished sticks on a parchment-lined tray and chill for 10–15 minutes to set the coating.

Heat oil and fry
Pour vegetable oil into a heavy-bottomed pot or deep fryer to a depth of 2–3 inches. Heat oil to 350°F (175°C). Fry sticks in batches of 4–6, turning as needed, until golden brown and crisp, about 2–3 minutes per side. Avoid overcrowding. Use a slotted spoon to transfer sticks to a paper towel-lined tray to drain. If cheese starts to escape, lower oil temperature by 5–10°F and reduce fry time slightly for subsequent batches.
