Method
Prep and Fill
Prepare jalapeños
Preheat oven to 400°F (200°C). Wash jalapeños and dry. Wearing gloves if desired, slice each jalapeño lengthwise in half and remove seeds and membranes with a spoon to reduce heat (leave some seeds if you want hotter sticks). Pat halves dry with paper towels.
Make cheese filling
In a medium bowl, combine softened cream cheese, shredded cheddar, garlic powder, onion powder, salt, and black pepper. Mix with a spoon or hand mixer until smooth and evenly combined. Taste and adjust seasoning if needed.
Fill jalapeños
Divide the cheese mixture into 24 halves (about 1 tablespoon per half). Using a small spoon or piping bag, fill each jalapeño half with the cheese mixture, mounding slightly but not overfilling.
Wrap and Bake
Wrap with bacon
Cut each bacon slice in half crosswise. Wrap one half-slice of bacon around each filled jalapeño half, starting at one end and spiraling to the other. Secure with a toothpick through the center if needed. Repeat for all filled halves. If using brown sugar, lightly sprinkle about 1/4 teaspoon brown sugar over each bacon-wrapped piece to create a candied finish.
Arrange on baking sheet
Line a rimmed baking sheet with foil and place a wire rack on top (optional - rack helps the bacon crisp). Arrange the wrapped jalapeño halves seam-side down, leaving small gaps between them for even air circulation.
Bake
Bake in the preheated 400°F (200°C) oven for 18–22 minutes, or until bacon is crisp to your preference and cheese is bubbly. If bacon is not crisping enough, broil on high for 1–2 minutes while watching closely to avoid burning.
Finish and Serve
Rest and garnish
Remove from oven and let the sticks rest on the sheet for 3–5 minutes; this helps the cheese set and prevents immediate oozing. Remove toothpicks before serving (or leave in for easy handling).
Serve
Transfer to a serving platter. Serve warm with ranch dressing or sour cream and hot sauce on the side for dipping.
