Syrup Preparation

Make simple citrus syrup

Combine 120 ml water and 150 g granulated sugar in a small saucepan. Add the lemon juice and lime juice. Add ginger slices if using for a ginger note. Bring to a gentle simmer over medium heat, stirring until the sugar is fully dissolved. Simmer 2–3 minutes to infuse flavors (no need to boil vigorously).

Remove from heat and let the syrup cool for 10–15 minutes. If you used ginger, mint, berries, or zest in the pan, steep them in the hot syrup for 10 minutes for stronger flavor, then strain the syrup through a fine mesh sieve into a clean container to remove solids. If desired, stir in 1.5 tsp citric acid while warm to add bright acidity and increase shelf stability.

Chill the syrup in the refrigerator until cold (30–60 minutes) or use at room temperature if serving immediately with very cold carbonated water.

Flavoring Options (how to incorporate aromatics)

Mint

Lightly clap or bruise 4–6 mint leaves between your palms to release oils. Add them to the cooled syrup to steep for 5–10 minutes, then remove so the mint remains bright. Reserve a sprig for garnish.

Berries

Muddle 50–75 g berries with 1–2 tbs of the syrup in a small bowl until broken down. Strain if you prefer a clear soda, or leave the puree for a fruitier drink. Add the berry syrup back to the main syrup to taste.

Vanilla or citrus

Stir 1 tsp vanilla extract or 1 tbs orange zest into the warm syrup, then strain to remove zest pieces. These add roundness or brightness respectively—adjust amount to preference.

Carbonation & Assembly

Chill carbonated water thoroughly. For 1 L of soda base, start by placing a clean pitcher in the fridge or over ice to keep the finished drink cold.

Measure the cooled syrup. A good starting ratio is 120–150 ml syrup per 1 L carbonated water for medium sweetness and flavor. For the listed syrup quantity, use 120–150 ml (about 1/2 to 2/3 cup) of syrup. Taste and adjust—use less for a lighter soda, more for a robust flavored soda.

Pour the measured syrup into the chilled pitcher. Slowly add the chilled carbonated water to the syrup to preserve bubbles. Stir gently once with a long spoon (2–3 slow strokes) to combine; avoid vigorous stirring to prevent losing carbonation.

If you prepared berry puree, gently swirl it in after adding carbonated water so pieces don't settle too quickly. For ginger-forward soda, add 1–2 thin fresh ginger slices per serving to the pitcher or individual glasses for extra aroma.

Serving

Fill glasses with ice (about 3–4 cubes per serving). Pour the aerated drink over the ice, leaving 1–2 cm headspace to retain fizz.

Garnish each glass with a lemon or lime wheel and a mint sprig. If you want extra visual flair, add a few whole berries to the glass.

Serve immediately while effervescent. Store unused syrup in a sealed container in the refrigerator for up to 10 days; keep carbonated water chilled and combine just before serving.
