Method

Prepare Glass

Salt rim

Lightly moisten the serving glass (rocks or coupe) rim with a bit of salted mango tequila or simple syrup. Dip rim into fine sea salt so that a thin salted edge forms. Chill the glass briefly if desired.

Build Cocktail

In a mixing glass with ice, combine the Signal cold brew–infused rum (2 tbs), Siempre Sailor Moon vanilla–infused rum (1.5 tbs), coffee liqueur (1 tbs), salted mango tequila (0.75 tbs), blanco cucumber tequila (0.5 tbs), and xtabentún (0.5 tbs).

Add aloe vera juice (0.75 oz) to the mixing glass to add a clean vegetal note and help bind flavors.

Stir the mixture gently for 20–30 seconds until well chilled and slightly diluted (use back-and-forth stirring with bar spoon). Strain into the prepared chilled rocks glass over one large ice cube.

Top gently with hibiscus tonic (2 oz). Pour slowly over the back of a spoon to create a subtle layered effect if desired.

Make Caramel Mascarpone Foam

In a small bowl or cocktail shaker, combine mascarpone (1 oz), heavy cream (1 oz), caramel sauce (0.5 tbs), powdered sugar (0.5 tsp), pasteurized egg white or aquafaba (0.5 oz), and a pinch of salt (approximately 1 tsp — adjust carefully; if using 1 tsp is too salty, use a light pinch).

If using a shaker: dry-shake (no ice) vigorously for 15–20 seconds to incorporate air. Then add a few ice cubes and shake hard for another 10–15 seconds to chill. If using an immersion blender or small whisk, whisk until light, airy, and spreadable — the foam should be thick but pourable.

Strain the foam through a fine sieve or pour gently with a spoon to remove any lumps so it sits smooth on the cocktail.

Using a bar spoon, gently float 1.5–2 tablespoons of the caramel mascarpone foam on top of the cocktail so it forms a velvety cap.

Garnish & Serve

Twist a thin cucumber ribbon and rest it against the ice cube inside the glass, or thread it through the dehydrated mango slice and place on the rim.

Place an edible hibiscus petal on top of the mascarpone foam for color contrast. Optional: very lightly sprinkle a few grains of fine sea salt onto the foam to echo the salted mango tequila.

Serve immediately with a small spoon so the drinker can break the foam and allow the flavours to mingle. Recommend serving chilled, single-sip experience.
