Simmer the spiced water

In a 2–3 quart saucepan, combine 8 cups water, 2 cinnamon sticks, 6 whole cloves, 2 star anise and the sliced inch of fresh ginger. Bring to a gentle boil over medium-high heat, then reduce to low and simmer, uncovered, for 8 minutes to infuse the spices.

Brew the tea

Remove the pan from heat. Add 6 black tea bags (or equivalent loose-leaf tea in an infuser). Cover and let steep for 4–6 minutes depending on desired strength (4 minutes for medium, 6 for strong). If you want a decaffeinated version, use decaf black tea here.

Strain

Remove and discard the tea bags or lift out the infuser. Strain the spiced tea into a heatproof pitcher or pot to remove the whole spices and ginger.

Sweetener & Milk Options

Sweeten while hot

While the tea is still hot, stir in 3 tablespoons granulated sugar and 2 tablespoons honey until fully dissolved. Taste and adjust sweetness — add an extra teaspoon of sugar or honey if you prefer it sweeter. If offering multiple sweetness choices for takeout, keep some plain and package sweeteners separately.

Finish with milk or cream

For a creamy 'Christmas chai' finish, warm 1 cup whole milk with 1 tablespoon heavy cream in a small saucepan until steaming (do not boil). Froth briefly if desired. For non-dairy, warm the chosen alternative the same way. Add about 2–3 ounces (1/4–1/3 cup) milk mixture per 12–16 oz cup, or to taste — you can also bottle milk separately for customers to add themselves.

Add citrus and extras

If using orange peel, twist or place a strip into each cup for aroma before pouring. Sprinkle 1/8 teaspoon ground nutmeg across the batch or a small pinch atop each cup. Optional: add a tablespoon of chopped roasted chestnuts or a few dried cranberries into the bottom of the cup for a novelty takeout experience (inform customers about solids).

Garnish each prepared cup with a small rosemary sprig tucked under the lid or placed on the lid for aroma and a festive look.

Portion into cups

Preheat or warm the disposable cups by rinsing with hot water, then pour the spiced tea into each 12–16 oz insulated cup, filling to about 3/4 full. Leave room for milk/cream (about 2–3 oz) and stirring. If offering multiple sweetness/milk options, label cups accordingly.

Add milk and final touches

Add the warmed milk/cream portion to each cup. Stir gently with a stirrer so the drink is homogeneous. Sprinkle a pinch of nutmeg and tuck a rosemary sprig into the lid seam for scent. Seal lids securely.

Label and serve

Attach a small label indicating contents (e.g., 'Spiced Black Tea — lightly sweetened, contains milk'), allergy notes, temperature warning, and the customer's name if needed. Pack cups upright in a takeaway carrier or box to prevent spills.

Storage & Reheating (if preparing ahead)

If making the spiced tea base ahead, cool it to room temperature then refrigerate in an airtight container for up to 48 hours. Reheat gently on the stovetop until steaming before adding milk and packaging. If you pre-mix with milk, use within 24 hours and keep refrigerated.
