    Make the Base

    In a medium saucepan, combine the whole milk, heavy cream, and sugar. Heat over medium heat until the sugar is dissolved and the mixture is steaming, but not boiling.

    Whisk Egg Yolks

    In a separate bowl, whisk the egg yolks until they are light and frothy. Slowly pour in a small amount of the warm milk mixture into the yolks, whisking constantly to temper them.

    Combine Mixtures

    Pour the tempered egg yolk mixture back into the saucepan with the remaining milk mixture. Cook over medium-low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon.

    Cool and Flavor

    Remove from heat and stir in the vanilla extract. Let the mixture cool to room temperature, then refrigerate until completely chilled, about 2 hours.

    Churn the Gelato

    Once chilled, transfer the mixture to an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Transfer the gelato to an airtight container and freeze for at least 4 hours before serving. Scoop and enjoy!
