    Chill and prepare glass

    Chill a champagne flute or coupe in the refrigerator for at least 15 minutes or by filling it with ice water for 5 minutes, then discard the ice water and dry. Have a small fresh orange or an already cut slice ready for garnish.

Assemble Mimosa

    If using orange liqueur for extra aromatic complexity, pour 0.25 oz of the liqueur into the bottom of the chilled flute.

    Pour 3 oz (about 90 ml) of freshly squeezed orange juice into the flute. Hold the glass at a slight angle to reduce foaming.

    Slowly and gently pour 3 oz (about 90 ml) of well-chilled sparkling wine down the side of the glass to preserve bubbles and minimize overflow. Pour until the glass is nearly full, leaving a small gap at the top to avoid spillage.

    If you prefer the drink slightly sweeter, stir gently once with a bar spoon to incorporate 0.25 tsp simple syrup without losing much effervescence.

    Garnish the rim or float an orange twist or slice on top of the drink.

    Serve immediately so the bubbles remain lively.
