Prepare aromatics

Trim tough outer layers of lemongrass, use only the tender white stalks. Finely mince the white part until almost paste-like. Finely grate the ginger and mince garlic. Slice scallions, keeping whites and greens separate.

Mix filling

In a large bowl combine ground pork, minced lemongrass, ginger, garlic, the white parts of the scallions, soy sauce, Shaoxing wine, sesame oil, fish sauce, sugar, white pepper and toasted sesame seeds if using. Mix with a spoon or by hand until sticky and well combined (about 1–2 minutes). This develops the filling texture.

Taste and adjust

Take a 1/2 teaspoon of filling and microwave or pan-fry briefly to test seasoning. Adjust saltiness (more soy or fish sauce) or sweetness as needed. After adjusting, stir again to incorporate.

Prepare wrappers

Set out potsticker wrappers on a clean work surface and keep a small bowl of cold water nearby for sealing.

Fill and fold

Place about 1 rounded teaspoon (approximately 12–15 g) of filling in the center of each wrapper. Dip a finger in cold water and moisten the wrapper edge. Fold into desired shape: half-moon with pleats, or bring corners together for a purse. Press to seal tightly, ensuring no air pockets. Repeat until filling is used (makes about 40 potstickers). Cover finished dumplings with a damp towel to prevent drying.

Sambal Honey (Honey Sambal)

Make the sambal honey by whisking honey, sambal oelek, rice vinegar, lime juice, soy sauce and toasted sesame oil in a small bowl until smooth. Taste and adjust heat (add more sambal) or acidity (add more lime or vinegar). Keep at room temperature; if too thick warm gently to loosen before serving.

Chubby Dumpling Sauce (Dipping Sauce)

Whisk together dark soy, black vinegar, light soy, toasted sesame oil and sugar until sugar dissolves. Add the minced garlic and ginger, chili crisp if using, and 1–2 tablespoons water to reach velvety, pourable consistency. Stir in sliced scallion greens. Taste and adjust balance of salt, sweet and acidity.

Cooking Potstickers

Pan-fry potstickers

Heat a large nonstick or cast-iron skillet over medium-high heat. Add 1–2 tablespoons neutral oil and swirl to coat. Arrange dumplings flat-side down with 1/2 inch space between. Fry undisturbed until bottoms are golden brown, 2–3 minutes.

Steam to finish

Carefully pour 1/2 cup water into the skillet (it will sizzle). Immediately cover with a tight-fitting lid and reduce heat to medium-low. Steam until water has evaporated and wrappers are tender, about 5–6 minutes.

Crisp bottoms (optional)

Remove lid and increase heat to medium-high to evaporate any remaining moisture and re-crisp the bottoms for 1 minute. For an extra-crisp finish, mix 1 tsp cornstarch with 1 tbsp water and drizzle a little around the dumplings before uncovering; it will create a thin crunchy skirt.

Finish

Transfer potstickers to a serving plate, bottom-side up to show crispness. Garnish with reserved scallion greens or toasted sesame seeds if desired.
